Ingredients

  • ½ cup unsweetened cocoa powder

  • ¼ cup oat flour or almond flour

  • ½ tsp baking soda

  • ¼ tsp salt

  • ⅓ cup dark chocolate chips (optional)


Instructions

  1. Prep the sweet potato: Roast or use canned sweet potato. Mash until smooth (or blend for extra creamy texture).

  2. Mix wet ingredients: In a large bowl, combine mashed sweet potato, nut butter, maple syrup, and vanilla.

  3. Combine dry ingredients: In another bowl, whisk cocoa powder, oat flour, baking soda, and salt.

  4. Make the batter: Slowly fold the dry mix into the wet mix. Stir until smooth and thick. Fold in chocolate chips, if using.

  5. Bake: Spread batter into a parchment-lined 8×8″ baking dish. Smooth the top.

  6. Bake at 325°F (163°C) for 20–22 minutes. The center should look slightly soft.

  7. Cool & set: Allow brownies to cool in the pan for 30–45 minutes. Refrigerate for extra fudgy texture before slicing.

Notes

  • Use sunflower seed butter for a nut-free version.
