Description

This healthy banana bread is naturally sweetened with honey, made with whole wheat flour, and perfectly moist without using butter or refined sugar. It’s a guilt-free twist on a classic favorite that’s easy to bake in one bowl.

Ingredients (for 1 loaf / 8–10 slices)

  • 3 ripe bananas (mashed)

  • 1/3 cup virgin coconut oil (melted) or extra virgin olive oil

  • 1/2 cup honey or pure maple syrup

  • 2 large eggs

  • 1 tsp pure vanilla extract

  • 1/4 cup unsweetened almond milk (or oat milk)

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 3/4 cups white whole wheat flour or whole wheat pastry flour

  • Optional Add-ins (choose 1 or combine):

    • 1/2 cup chopped walnuts or pecans

    • 1/3 cup dark chocolate chips

    • 1/4 cup raisins or dried cranberries

    • 1 tsp cinnamon


Instructions

  1. Preheat the oven to 325°F (163°C). Lightly grease an 8.5″ x 4.5″ loaf pan or line with parchment paper.

  2. In a large bowl, whisk the mashed bananas, melted oil, honey or syrup, eggs, and vanilla until smooth.

  3. Add the milk, baking soda, and salt. Stir to combine.

  4. Add the flour and fold in gently until just mixed—do not overmix.

  5. Fold in any optional ingredients (nuts, chocolate, dried fruit).

  6. Pour the batter into the prepared loaf pan and smooth the top.

  7. Bake for 55–60 minutes, or until a toothpick inserted in the center comes out clean.

  8. Cool in the pan for 10 minutes, then transfer to a wire rack to finish cooling. Slice and serve!
