Ingredients
1 cup almond butter (smooth, unsweetened)
6 tablespoons raw sugar (or coconut sugar)
1 large egg
Optional Add-ins:
¼ cup dark chocolate chips
1 tablespoon shredded coconut
½ teaspoon cinnamon
Pinch of sea salt
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a bowl, mix almond butter, raw sugar, and egg until smooth and combined.
Scoop dough into 1-inch balls and place on baking sheet.
Flatten each cookie slightly with a fork in a crisscross pattern.
Bake for 9–11 minutes until the edges are golden brown.
Let cookies cool for 5 minutes on the pan, then transfer to a wire rack to cool completely.
Notes
For vegan version, use 1 flax egg (1 tbsp flaxseed + 3 tbsp water).
Cookies will feel soft when removed from oven but firm up as they cool.
Store in an airtight container for up to 5 days or freeze for 3 months.
