Description

Ingredients

Scale
    • 1 cup almond butter (smooth, unsweetened)

    • 6 tablespoons raw sugar (or coconut sugar)

    • 1 large egg


Optional Add-ins:

    • ¼ cup dark chocolate chips

    • 1 tablespoon shredded coconut

    • ½ teaspoon cinnamon

    • Pinch of sea salt


Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a bowl, mix almond butter, raw sugar, and egg until smooth and combined.

  3. Scoop dough into 1-inch balls and place on baking sheet.

  4. Flatten each cookie slightly with a fork in a crisscross pattern.

  5. Bake for 9–11 minutes until the edges are golden brown.

  6. Let cookies cool for 5 minutes on the pan, then transfer to a wire rack to cool completely.

Notes

  • For vegan version, use 1 flax egg (1 tbsp flaxseed + 3 tbsp water).

  • Cookies will feel soft when removed from oven but firm up as they cool.
